Ingredients:
- Eggplant (or green squash) - 1 pc
- Zucchini -1 pcs
- Tomatoes - 4 pcs
- Pepper bolgan - 2 pcs
- Onion - 1 piece
- Garlic - 2-3 cloves
- Sunflower / olive oil
- Parsley (you can add thyme, dill)
- Seasoning "Provencal herbs"
- Black pepper
Preparation of sauce:
1. Fry chopped the onions.
2. Add 2 chopped Bulgarian pepper and 2 chopped tomatos, then fry. Add the seasoning and black pepper.
3. Cover with top & steam everything for about 10 minutes.
4. Put some of the sauce in a tray where the vegetables will be baked.
Preparation of vegetables:
1. Zucchini, eggplant and tomatoes cut into thin round slices.
2. Lay them in a circle over the sauce on the tray.
3. Sprinkle top with seasoning, greens. Sprinkle with sunflower / olive oil.
4. Cover the top with a aluminum foil and bake in the oven at 350°F for the first 30 minutes, then remove the foil and cook for another 10 minutes or until the sauce is slightly boiled (if you wish. Some may like it covered in sauce)
5. When serving, you can sprinkle with herbs, pour the remaining sauce and so on. Serve as a main dish or garnish.
